How we use seasonal ingredients from the castle garden at Polepšovna, and why our food captures the essence of the local landscape.
At Polepšovna, we believe that the best food starts in the garden. Every day, our castle garden supplies us with fresh vegetables, fruit, herbs, and mushrooms—and it is from these ingredients that our chefs create dishes that taste exactly as food should.
The aroma of homemade bread wafts from the oven every morning. We bake cakes and pastries using recipes that deserve time and patience. Craft beer and specialty coffee round out the menu, which is simple yet authentic—just like our entire castle.
The seasonal menu changes with what is currently growing in the garden. In spring, you’ll be greeted by fresh herbs and radishes; in summer, tomatoes and zucchini; and in fall, pumpkins and mushrooms. Every plate tells the story of the season and the landscape where it was created.
Inside the bistro, you’ll find 40 seats in a cozy setting with historic details; outside, 50 seats await you in the garden beneath the tree canopy of the castle park. Whether you come for a hearty lunch, afternoon coffee with homemade cake, or a glass of wine at sunset—Polepšovna will welcome you with joy and without haste.
